Mondongo

Sopa de menudo con carne de cerdo y chorizo acompañado de cilantro, arroz Blanco y aguacate. / Colombian soup with pork, tripe and Colombian sausage. It is a hearty soup and a signature dish of Colombia. Tripe is the main meat in the dish and it is balanced with lean pork and pieces of chorizo, which are used for rich flavor accompanied by white rice and avocado.
